Olive Oil Roasted Sweet Potatoes

Transform sweet potatoes into a flavor-packed delight! Simple, delicious, and perfect for any meal.
INGREDIENTS
  • 2 pounds of sweet potatoes (approximately 2 to 3 potatoes)
  • 2 tablespoons of Zejd extra virgin olive oil
  • ½ teaspoon paprika
  • Kosher salt and freshly ground black pepper, to taste
INSTRUCTIONS
  1. Cut the sweet potatoes (optionally peeled) into uniform ½-inch cubes.
  2. In a mixing bowl, combine the diced sweet potatoes with Zejd extra virgin olive oil, garlic powder, paprika, and a seasoning of kosher salt and freshly ground black pepper. Using your hands, gently toss the ingredients until the sweet potato cubes are thoroughly and evenly coated.
  3. Arrange the seasoned sweet potato cubes in a single layer on large baking sheet, ensuring sufficient space between each cube for even cooking.
  4. Roast in a preheated oven to 200°C for approximately 30 to 35 minutes. Stir the sweet potato cubes half way through to ensure all sides are cooked through.
  5. Remove from the oven once the sweet potatoes achieve a desirable golden-brown hue and a tender texture.
  6. Serve as a flavorful side dish to your favorite meals.
