
A simple sandwich that combines fresh ingredients with the bold flavor of Zejd pesto tapenade.
Ingredients (1 sandwich)
1 ciabatta bread, sliced
3–4 slices halloumi cheese
A handful of arugula
2–3 tomato slices
1 tablespoon Pesto Tapenade from Zejd
1 teaspoon olive oil (optional)
Instructions
- Heat a pan over medium heat and grill the halloumi slices until golden on both sides.
- Lightly toast the ciabatta if desired.
- Spread the Zejd pesto tapenade on the bottom half of the bread.
- Layer the grilled halloumi, tomato slices, and arugula.
- Drizzle a little olive oil if desired, close the sandwich, and serve.
