INGREDIENTS
- 4 large tomatoes
- 2 to 4 medium garlic cloves, finely minced
- 1/2 cup Zejd Basil infused olive oil
- Handful of fresh basil, torn into small pieces
- 450g spaghetti
- 1/4 cup grated parmesan cheese
- 1 tablespoon sea salt
INSTRUCTIONS
- In a large bowl mash the tomatoes mixture several times with the back of a large spoon to release the juices.
- Add the basil infused olive oil, garlic and basil. Season with salt, stir to combine, and let the mixture sit at room temperature for at least 15 minutes and up to 30 minutes.
- Cook the pasta according to package instructions, then drain.
- Immediately add hot pasta to the serving bowl. Mix with the tomatoes mixture to combine.
- Serve topped with grated parmesan cheese.
