- 150 g Zejd Souri Green Olives, pitted
- 150 g Zejd Souri Black Olives, pitted
- 1/3 cup (80ml) Zejd Extra Virgin Olive Oil
- 1/4 cup (20g) finely diced Fresh Parsley
- 4 large Garlic Cloves, peeled & sliced into 3 pieces each
- 1 Orange, peeled into 3/4" strips using a vegetable peeler
- 1 tbsp Red Wine Vinegar
- 1 tsp Dried Oregano
- 1 tsp Chili Flakes, or to taste preference
- In a large shallow dish, whisk together Zejd Extra Virgin Olive Oil, red wine vinegar, parsley, oregano, and chilli flakes.
- Add olives, orange peel, and garlic, tossing to coat thoroughly.
- Cover and marinate for an hour at least, occasionally tossing.
- Enjoy right away or refrigerate; in which case, allow to reach room temperature before serving to loosen the extra virgin olive oil.
