INGREDIENTS
  • 1 cup fresh strawberries, diced
  • 1 cup plain yogurt
  • 2 tablespoons honey
  • 1/4 cup Zejd extra virgin olive oil
  • 1/2 cup dark chocolate, chopped
INSTRUCTIONS
  1. Rinse the fresh strawberries under cold water and pat them dry with a paper towel. Remove the stems and dice them into small pieces. Set aside.
  2. In a mixing bowl, combine the plain yogurt and honey. Stir until the honey is evenly distributed throughout the yogurt.
  3. Add the diced strawberries to the yogurt mixture. Gently fold them in until evenly distributed.
  4. Line a baking sheet with parchment paper. Using a spoon, scoop small clusters of the yogurt mixture onto the prepared baking sheet, leaving some space between each cluster.
  5. Place the baking sheet in the freezer and let the yogurt clusters freeze for about 1-2 hours, or until firm.
  6. In a microwave-safe bowl, combine the chopped dark chocolate and olive oil. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
  7. Remove the frozen yogurt clusters from the freezer. Dip each cluster into the melted chocolate mixture, coating it partially or fully, as desired.
  8. Place the chocolate-dipped clusters back onto the parchment-lined baking sheet.
  9. Return the baking sheet to the freezer for a few minutes to allow the chocolate coating to set.
  10. Serve the strawberry yogurt clusters with chocolate dip immediately as a delicious treat. Alternatively, transfer them to an airtight container and store them in the freezer for longer-term storage.
