INGREDIENTS
- 1 small seedless watermelon (3 pounds or 1.3 kg), rind removed, cut into 1-inch chunks and chilled
- 1/4 (60ml) cup extra virgin olive oil
- 2 tablespoons lemon juice
- 1/4 cup chopped fresh mint leaves
- 4 ounces (110g) crumbled feta cheese
- 1/2 teaspoon salt
- Small pinch of freshly ground black pepper
INSTRUCTIONS
- Place watermelon chunks in a large bowl. Add the oil, lemon juice and mint, and toss until watermelon is evenly dressed. Season lightly to taste with salt and pepper.
- Transfer salad to a wide bowl or a large plate. Sprinkle the crumbled feta cheese on top and drizzle with more olive oil. Serve immediately.
