INGREDIENTS
- 1 cup fine semolina
- 2 cups all-purpose or cake flour
- 1 tablespoon turmeric
- 1 ½ teaspoons baking powder
- 1 cup extra virgin olive oil
- 1½ cup milk
- 1 cup sugar
- 1-2 tablespoons tahini or oil
- Handful of pine nuts
INSTRUCTIONS
- Preheat the oven to 180ºC. Grease a 9×9" baking pan with the tahini or oil.
- Mix the dry ingredients (semolina, flour, turmeric and baking powder) together in a large bowl.
- Mix the extra virgin olive oil and milk in another small bowl. Stir in sugar until dissolved.
- Combine both mixtures and whisk to obtain a nice smooth yellow batter.
- Pour the batter in the greased pan and sprinkle the pine nuts as a topping.
- Bake in the oven for 40-45 minutes until the top is lightly browned. Remove from the oven once a toothpick inserted in the center comes out clean.
- Set to rest at room temperature before serving.
